Serves 6

  • 1.2kg of boneless beef brisket
  • 1 tbsp of chipotle in adobo sauce
  • 3 tsp of dried oregano
  • 3 cloves of crushed garlic
  • 2½ tsp of ground cumin
  • 1½ tbsp of red wine vinegar

Step 1

Preheat the oven to 160°C.

Step 2

Put the beef in a baking dish.

Step 3

Mix the chipotle, oregano, garlic, cumin and red wine vinegar together in a small bowl and add a splash of water.

Step 4

Rub the contents of the bowl all over the beef, then cover the baking dish with foil or a tight. Bake for at least four hours (or until the meat is very tender).

Step 5

Remove the baking dish from the oven and leave it to stand for 30 minutes (or until it’s cool enough to handle).

Step 6

Shred the brisket and enjoy.
