Score the skin and rub generously with salt to create the perfect crispy crackling. Roast at 220°C for 25 minutes, then reduce to 180°C and cook for 45 minutes per kilo. Rest before carving to lock in juiciness. Serve with roasted apples, fennel, or traditional gravy and mustard.

We currently deliver to selected regions across Australia using refrigerated couriers and registered delivery vehicles. All orders are packed in insulated, biodegradable thermal boxes with ice packs to maintain cold chain integrity from our butcher shop to your door.
Deliveries are made to the address provided at checkout. If no one is home, orders may be left safely at the doorstep unless otherwise requested. Once delivered, responsibility for the care of products transfers to the customer. Please refrigerate or freeze items as soon as possible upon delivery.
