Not necessarily. Your order will be delivered in tested insulated food safe packaging with ice packs. Generally our courier partners will place these boxes in a place with shade and communicate with you when it has been delivered.
If you can't be home, you may want to use a work address or specify safe drop instructions by email. Be cautious with long periods unattended, as food safety can be affected.
Yes, our butchers can accommodate your cutting preferences for large primals, whole cuts, pieces and logs as long as they are safe and possible to do so.
For instance, you might want the rump cap cut into steaks. Provide us with a thickness of the cut and/or weight per piece, example: Approximately 2.5cm, 300g pieces.
Just leave clear instructions by messaging via our online chat or emailing us.
Vacuum sealing involves removing nearly all air from the packaging before sealing. This reduces oxidation and bacterial growth, extending freshness.
See best before days below for different types of protein when chilled and vacuum sealed:
We recommend storing the products chilled at ~2 °C for these estimates to apply.
Once opened, the counting of "fresh storage time" resets to that of standard packaging.
In the freezer at –18 °C, vacuum sealed meat can last 1–3 years (depending on cut and temperature consistency).
Some products may arrive frozen as our team will take this into consideration when packing for orders that require longer shipping times.
This is completely normal and not a sign of spoilage. When beef is vacuum sealed, oxygen is removed from the packaging. Without oxygen, the naturally occurring pigments in the meat can cause it to appear brown or grey. This colour change is purely cosmetic and does not affect the quality, safety, or flavour of the beef.
Once you open the vacuum seal and the meat is exposed to air again, the bright red colour will return within a short period. This process is called "blooming" and happens naturally as oxygen reacts with the myoglobin in the meat.
In short: Brown or grey meat in vacuum packaging is expected, safe and normal.
When you ask us to slice bulk beef into steaks, some weight loss is normal.
If absolute weight retention is critical, you can opt to receive the cut whole (so you do the cutting) or ask to keep the trim and pack them separately once cut.
