The Pinnacle of Tenderness and Luxury.

The Diamantina PURE Wagyu Eye Fillet represents the highest standard of Wagyu beef, a centerpiece cut designed for unforgettable dining. With an outstanding marble score of 8–9, this tenderloin delivers buttery richness, exquisite texture, and deep, lingering flavour.

Sourced from Stanbroke’s award-winning Wagyu program, each 3kg whole fillet is expertly trimmed by our craft butchers and vacuum-sealed to lock in peak freshness. It offers unmatched versatility and can be portioned into thick steaks, roast as a luxurious centerpiece, or craft the ultimate Beef Wellington for a show-stopping feast.

The Difference: Wagyu vs Pure Wagyu

  • F1 Wagyu: Refers to a first-cross Wagyu, typically a 50/50 blend between Wagyu and another breed. While still beautifully marbled and tender, F1 Wagyu offers a balance of Wagyu richness with the stronger beefiness of its crossbred parentage.

  • Pure Wagyu: Comes from fullblood or purebred Wagyu genetics, carrying a much higher potential for marbling, texture, and flavour complexity. Pure Wagyu achieves the ultra-high marble scores of SB 8–9+ and needs to have at least 97.75% Wagyu genetics. This delivers the signature melt-in-your-mouth experience, luxurious richness, and silk-like tenderness Wagyu is world-renowned for.

Why Choose This Wagyu Eye Fillet

  • Pure Wagyu genetics for unmatched refinement

We run refrigerated deliveries direct to your address on specific days depending on your area. Please refer to our Shipping Policy for more info. Couriers only offer delivery from Monday to Friday.

Do you deliver to PO boxes or parcel lockers?

No, unfortunately we do not deliver to PO boxes or parcel lockers due to the size of our products and the need for refrigeration.

What time will my order arrive?

You'll receive a text on the day or before your scheduled delivery from the courier with tracking and an estimated time of arrival. Deliveries generally occur between 8:00 am and 6:30 pm.

We can't guarantee a precise delivery window, but last-minute updates will be sent via the tracking link.

We aim for perfection, but mistakes can happen. If there are any discrepancies, please contact us immediately at info@peteraugustus.com.au or 0486 364 355 and we'll make it right (refund, replacement, etc.).

Do I need to be home to receive the delivery?

Not necessarily. Your order will be delivered in tested insulated food safe packaging with ice packs. This will give you some time depending on the weather and where the package was placed when delivered. Generally our courier partners will place these boxes in a place with shade and communicate with you when it has been delivered.

If you can't be home, you may want to use a work address or specify safe drop instructions by email. Be cautious with long periods unattended, as food safety can be affected.

Custom Packing & Cutting

Can I request custom cutting instructions?

Yes, our butchers can accommodate your cutting preferences for large primals, whole cuts, pieces and logs as long as they are safe and possible to do so.

For instance, you might want the rump cap cut into steaks. Provide us with a thickness of the cut and/or weight per piece, example: Approximately 2.5cm, 300g pieces.

Just leave clear instructions by messaging via our online chat or emailing us.

What is vacuum sealing and why do we use it?

Vacuum sealing involves removing nearly all air from the packaging before sealing. This reduces oxidation and bacterial growth, extending freshness.

See best before days below for different types of protein when chilled and vacuum sealed:

  • Beef primals and whole cuts - Up to 28 days
  • Beef, sliced into steaks - Up to 21 days
  • Beef, bone in - Up to 14 days
  • Lamb whole cuts - Up to 28 days
  • Lamb, bone in - Up to 14 days
  • Chicken - Up to 7 days
  • Pork - Up to 7 days
  • Ham - Up to 30 days
  • Sausages - Up to 9 days

We recommend storing the products chilled at ~2 °C for these estimates to apply.

Once opened, the counting of "fresh storage time" resets to that of standard packaging.

In the freezer at –18 °C, vacuum sealed meat can last 1–3 years (depending on cut and temperature consistency).

Some products may arrive frozen as our team will take this into consideration when packing for orders that require longer shipping times.

Why is my beef turning brown when vacuum sealed?

This is completely normal and not a sign of spoilage. When beef is vacuum sealed, oxygen is removed from the packaging. Without oxygen, the naturally occurring pigments in the meat can cause it to appear brown or grey. This colour change is purely cosmetic and does not affect the quality, safety, or flavour of the beef.

Once you open the vacuum seal and the meat is exposed to air again, the bright red colour will return within a short period. This process is called "blooming" and happens naturally as oxygen reacts with the myoglobin in the meat.

In short: Brown or grey meat in vacuum packaging is expected, safe and normal.

When you ask us to slice bulk beef into steaks, some weight loss is normal.

When you ask us to slice bulk beef into steaks, some weight loss is normal.

  • Meat naturally contains moisture which can be released over time.
  • End trimming, removal of gristle or fat, and slicing can result in slight loss.

If absolute weight retention is critical, you can opt to receive the cut whole (so you do the cutting) or ask to keep the trim and pack them separately once cut.
