Cooking & Serving Inspiration

Bring to room temperature before cooking. For best results, season generously with salt, pepper, and rosemary. Roast at 220°C for 20 minutes to form a crust, then reduce to 160°C and cook for approx. 20–25 minutes per 500g for medium-rare. Rest for at least 20 minutes before slicing.

Serve with horseradish cream, jus, or a red wine reduction. Complements roasted root vegetables, Yorkshire pudding, and your favourite full-bodied red wine.
