With a Marble Score of 4–5, it features rich intramuscular fat that renders down during cooking, delivering melt-in-your-mouth texture and deep, beefy flavour. Whether you're preparing a competition-worthy smoke or a hearty feast, this Wagyu brisket delivers every time.

Cooking & Prep Inspiration

  • Smoking: Cook low and slow at 107–120°C for 10–14 hours using your preferred wood. Wrap in butcher paper once it hits the stall (~70°C), then rest for 1–2 hours before slicing.
  • Oven Roasting: Slow-roast at low heat with a dry rub or marinade. Cover and cook until fork-tender for a rich, comforting result.
  • Prep Tip: Trim to your preferred fat cap thickness before seasoning. A simple mix of salt, pepper, and garlic lets the Wagyu flavour shine.
  • Serving: Slice against the grain and serve with slaw, pickles, brioche buns, or roasted vegetables for a complete BBQ spread.
