    What is Black Onyx Beef?

By Faith Lerio  •   6 minute read

Black Onyx Picanha Rump Cap SB 5

Black Onyx is a premium grain-fed Angus program produced by Stanbroke, one of Australia's most vertically integrated beef producers. At Peter Augustus, the Black Onyx range represents a meaningful step above standard grain-fed beef, grounded in consistent genetics, a minimum 230-day grain-finishing period, and a guaranteed minimum marble score that is verified before any cut reaches your door. This article covers what makes Black Onyx different, how the Stanbroke supply chain supports that quality, how to read the SB marble score, and how to get the best out of the beef once it arrives.

What Makes Black Onyx Angus Different?

Not all Angus beef is equal. The Black Onyx program draws on pure Black Angus genetics and a grain-finishing period of a minimum 230 days. The extended feeding window allows cattle to develop intramuscular fat at a slower, more deliberate rate, which produces the consistent marbling that defines the program.

Black Onyx is also HGP-free, meaning no hormonal growth promotants are used in the production process. This is a deliberate production choice that reflects the program's commitment to cattle welfare and eating quality. HGP-free beef takes longer to reach market, which is part of why the 230-day grain-finishing period matters. The cattle are not being pushed. They are being developed.

The result is a guaranteed minimum SB3 marble score across the range, with select cuts reaching SB5. On the Peter Augustus SB scale, SB3 to SB5 represents the everyday premium tier, where flavour and tenderness are reliably elevated above commodity beef. It is also where Black Onyx sits comfortably apart from high-grade Wagyu, which scores SB6 and above and demands more careful handling. Black Onyx delivers that balance: rich, flavourful, and versatile across a wide range of cooking methods.

The Stanbroke Supply Chain and What It Means for Quality

All Black Onyx at Peter Augustus comes from Stanbroke, which owns and operates each stage of the production process from breeding through to processing. This matters because animal welfare and consistency are directly linked. Any undue stress an animal experiences at any stage of its life affects the quality of the beef it produces. Because Stanbroke controls the full supply chain, Peter Augustus can guarantee the quality of the product in a way that is not possible when sourcing from multiple independent suppliers.

This level of supply chain traceability is not common in the Australian beef market. Most retailers source from multiple producers and have limited visibility over animal management at the property level. The Stanbroke structure removes that variable. When you order Black Onyx from Peter Augustus, you are buying beef with a known origin, a known production standard, and a verified marble score.

    SB Score Explained

The SB score measures intramuscular fat, the white flecks visible in the meat before and during cooking. Higher scores indicate more marbling, which translates to superior tenderness, juiciness, and a richer flavour profile. Every cut in the Black Onyx range carries a verified SB score, printed clearly on the product listing so you know exactly what you are buying before you order.

    Indulgent Peak

Extreme marbling associated with high-grade Wagyu. Melt-in-the-mouth texture. Requires lower heat and smaller portions.

Black Onyx sits firmly in the SB3 to SB5 range. It is premium beef that performs at a high level across a wide range of cooking methods, from high-heat grilling to low-and-slow smoking, without requiring the careful handling that very high marble scores demand.

    How to Cook Black Onyx

Because of the consistent marbling, Black Onyx responds well to both direct and indirect heat. The intramuscular fat renders during cooking, basting the meat from within and producing a juicy, flavourful result that leaner beef cannot replicate. The SB3 to SB5 range is also forgiving. Unlike extreme Wagyu marbling, which requires lower heat and shorter cook times to avoid overwhelming the palate, Black Onyx performs across a wide range of methods and occasions.

    High Heat. The Tomahawk.

For steaks such as the Black Onyx Tomahawk SB5, high-heat grilling or the reverse sear method produces a well-developed crust and a rich, juicy centre. The bone-in presentation retains heat during resting and adds to the flavour of the finished steak. Rest the steak for at least 10 minutes before slicing to retain the juices and maximise tenderness.

    Low and Slow. The Brisket.

For low-and-slow applications, the Black Onyx Brisket SB3 is a standout cut. The marbling and connective tissue break down over extended cooking time, producing deep flavour and the kind of texture that serious barbecue demands. The 20kg bulk format suits competition cooks, catering setups, and anyone who takes low-and-slow seriously.

    A Note on Colour

Black Onyx at Peter Augustus is vacuum sealed for freshness. In the packaging, the meat may appear darker or slightly purplish. This is normal and is caused by reduced oxygen exposure during transport and storage. Once the packaging is opened, rest the meat for 10 to 20 minutes before cooking. Exposure to air triggers a process called blooming, where the natural myoglobin in the beef reacts with oxygen and the colour returns to a rich, deep red.

    Important

If the use-by date is within range and the vacuum seal is intact on arrival, colour variation is not a quality concern. The meat is fresh. Bloom occurs within 10 to 20 minutes of opening the packaging. If you have any concerns about your order, contact Peter Augustus directly.

    Frequently asked questions

    01

What does Black Onyx beef taste like compared to regular Angus?

Black Onyx has a noticeably richer flavour and more tender texture than standard grain-fed Angus, due to the extended 230-day grain-finishing period and higher marble score. The fat renders during cooking to produce a juicier, more satisfying result. It is not as intensely rich as high-grade Wagyu, which makes it a versatile choice across a wide range of cooking methods.

    02

    Is Black Onyx beef HGP-free?

Yes. Black Onyx is produced without hormonal growth promotants. This is a deliberate production standard that reflects the program's focus on cattle welfare and eating quality. HGP-free production takes longer, which is one reason the 230-day grain-finishing period is central to the Black Onyx program.

    03

What is the SB marble score for Black Onyx?

The Black Onyx range carries a guaranteed minimum SB3 marble score, with select cuts reaching SB5. The SB scale runs from SB0 to SB10, with higher scores indicating more intramuscular fat and richer eating quality. SB3 to SB5 is the everyday premium tier, sitting above standard grain-fed beef and below the extreme marbling of high-grade Wagyu.

    04

How is Black Onyx different from Wagyu?

Black Onyx is a pure Black Angus program, while Wagyu refers to a different breed with a genetic predisposition to extreme marbling. Black Onyx sits in the SB3 to SB5 range, making it a rich, flavourful cut that is accessible and versatile. Wagyu typically scores SB6 and above, producing a more indulgent eating experience that suits smaller portions and lower heat cooking. Both are available at Peter Augustus.

    05
