    The SB score measures visible intramuscular fat. Higher scores generally mean more marbling, a softer texture and greater richness. The cut still matters, so use the score and cut together.

    SB 0 to 2

    Beef-forward

    Leaner marbling, a firmer bite and a more traditional Angus flavour. Choose this range for everyday grilling and pan cooking.

    SB 3 to 5

    Balanced richness

    More visible marbling with a strong balance of flavour, tenderness and juiciness. Many premium Black Onyx cuts sit here.

    SB 6 to 10

    Wagyu territory

    Very high marbling is more commonly associated with premium Wagyu programs and benefits from smaller portions and controlled heat.

    How to Cook Black Onyx

    Moderately marbled cuts work well over direct heat. Thicker or richer cuts benefit from slower temperature control followed by a short final sear.

    Pat the surface dry, season simply and use strong direct heat. Sirloin, rib fillet, rump and picanha can develop a deep crust while staying juicy inside.

    Black Onyx may appear darker or slightly purple in the pack because oxygen is reduced. Open the pack and allow the beef to bloom for 10 to 20 minutes. If the use-by date is current and the seal is intact, this colour change is normal.
