    The quick answer

Marbling is the fine fat inside the muscle. As it warms, it adds juiciness, tenderness and richness. A higher SB score means more visible marbling, but the best score is the one that matches your preferred flavour, portion and occasion.

    Inside the steak

    What Marbling Actually Does

Marbling is intramuscular fat. It sits within the muscle, not around the outside edge.

    Flavour

Rendered fat carries aroma and creates a rounder, richer finish.

    Juiciness

The fat softens with heat and helps the steak feel succulent.

    Tenderness

Fine marbling can create a softer bite and more luxurious mouthfeel.

The SB Scale at a Glance

The higher the number, the more visible marbling. The experience moves from beef forward to intensely rich.

    SB 0 TO 2

    Lean and Clean

Traditional beef flavour, a firmer bite and less richness.

    Best for: bold steak flavour
    Portion: generous
Cook watch: protect it from drying out
    SB 3 TO 5

    Balanced and Rich

Tender, juicy and versatile enough for a premium steak night.

Best for: first Wagyu and regular steak nights
    Portion: standard steak serve
Cook watch: forgiving, but still use temperature
    SB 6 TO 10

    Luxurious and Intense

A softer, buttery and deeply rich experience that rewards restraint.

Best for: tasting moments and celebrations
    Portion: smaller and shared
Cook watch: avoid rendering away the richness

Butcher note: marble score describes marbling, not the whole steak. Cut, thickness and cooking temperature still shape the final result.

    Higher is not automatically better

Match the Score to the Moment

    BOLD BEEF FLAVOUR

    SPECIAL OCCASION

    Choose SB 6 to 10

For a buttery, luxurious experience in a smaller serve.

The right score is the one that matches your moment.

    Behind the score

    How Marbling Develops

Marbling is not created by one thing. It develops through a combination of potential and careful production.

    01

    Genetics

Breed and bloodline influence the animal's potential to develop fine intramuscular fat.

    02

    Nutrition

A carefully managed feeding program supports consistent marbling development.

    03

    Time

Marbling develops gradually, so finishing time and management matter.

    Do not convert blindly

    Three Scales. Three Different Labels.

Peter Augustus product labels use the SB scale. AUS-MEAT and Japanese BMS are separate grading references.

System Range Where you will see it What to remember
Peter Augustus SB 0 to 10 Peter Augustus and Stanbroke product labels Use this guide when shopping the range
AUS-MEAT 0 to 9+ Australian industry grading This is the scale discussed in the older marbling article
Japanese BMS 1 to 12 Japanese beef grading A BMS number is not a direct SB conversion

Simple rule: compare steaks within the scale printed on the label. Do not assume the same number means the same grade in another system.

    Marble Score FAQs

Is a higher marble score always better?

No. Higher scores are richer and softer, but a lower score can deliver stronger traditional beef flavour, a larger portion and a cleaner finish.

Does marble score tell me which cut to buy?

Not by itself. Marble score describes the marbling. The cut still changes flavour, tenderness, size and cooking style. Use the first time Wagyu guide to compare rump, sirloin, rib fillet and Tomahawk.

Is SB the same as Japanese BMS?

No. The systems use different ranges and assessment frameworks. Treat comparisons as a guide to richness, not a direct number for number conversion.

Does a higher score mean a longer cooking time?

No. Thickness and internal temperature matter more than score alone. Highly marbled steak often needs simpler seasoning, controlled heat and a shorter finish.
