First Place for Peter Augustus: Daniel Roberts Wins Retail Butchery at WorldSkills Regionals

Daniel Roberts, Apprentice at Peter Augustus, Camp Hill Store

A result like this doesn't happen by chance. It's the product of years of practice, patience, and dedication to the trade, and the whole team at Peter Augustus couldn't be prouder. Congratulations, Daniel, you've set the bar high, and we can't wait to see where this journey takes you next.

He's taken first place in the Retail Butchery category at the 2026 WorldSkills Australia Regional Competition, held in Brisbane on 7 July.

This is Daniel's second WorldSkills medal in as many years, and his best result yet. It caps off a competition day built around the fundamentals of the trade: precision, economy, and a finished product a customer would actually want to buy.

    Daniel's WorldSkills Journey

    01

    June 2025, National Championships, Brisbane

Second place, Retail Butchery. One of the largest trade skills events in the Southern Hemisphere.

    02

    July 2026, Regional Competition, Brisbane

First place, Retail Butchery. Five hours, one day.

    03

    2027, National Championships, Adelaide

This regional win puts Daniel forward for nomination. If selected, the format steps up considerably: three meats, three days, twenty-one hours of competition in total.

    What the Competition Involves

Retail Butchery is one of the trade categories tested each year in the WorldSkills Australia Regional Competitions, aligned to the Certificate III in Meat Processing (Retail Butcher) qualification. Over a single five-hour day, competitors are tested across the full range of a retail butcher's skill set.

    Breakup & Cutting Lines
Working a primal down into its component cuts, cleanly and correctly.
    Cleanliness of Primal
Precision and hygiene through every stage of the cut.
    Initiative & Value Adding
Turning trim and offcuts into something a customer would actually buy.
    Effective Merchandising
Presenting the finished cuts the way a customer would actually see them in store.

It's a demanding format, and one that tests precision under real pressure.

    The Path Behind Every Cut

Daniel's competition category maps directly to a real trade qualification, the Certificate III in Meat Processing (Retail Butcher), completed as an apprenticeship over years of on-the-job training alongside formal study through a registered training organisation or TAFE.

Apprenticeships in this trade run up to four years. Daniel's regional win is a single day's result sitting on top of years of that groundwork.

That preparation plays out at Camp Hill every day, cut by cut, under supervision, on real product, for real customers. A national medal is a rare, visible marker of that process. Most of it happens quietly, on the floor, without an audience.

    About the Retail Butchery Competition

WorldSkills Australia runs Retail Butchery on a two-year cycle, alternating between Regional Competitions and the National Championships. It begins at a grassroots level across the country, testing thousands of apprentices, trainees, and students for the chance to medal gold, silver, or bronze, and go on to compete at a national level.

    Frequently Asked

    01

    What is WorldSkills Australia?

A national program run every two years, testing apprentices, trainees, and students across more than sixty trade and skill categories. It starts at a regional level and, for those selected, builds toward the National Championships.

    02

Does a regional win guarantee a spot at Nationals?

No. Progression isn't automatic. Regional committees nominate their strongest competitors forward, so a result like Daniel's puts him in the running, not on the plane.

    03

What happens if Daniel makes it to Adelaide?

A much bigger test. The National Retail Butchery competition runs across three meats over three days, twenty-one hours of competition against the strongest nominated competitors from around the country.

    04

What is the Certificate III in Meat Processing (Retail Butcher)?

There's no government licence required to work as a butcher in Australia, but the Certificate III in Meat Processing (Retail Butcher) is the standard, industry-recognised trade qualification. It's completed as an apprenticeship, up to four years of on-the-job training alongside formal study, and once finished, qualifies a butcher for registration with the Australian Meat Industry Council, the body that formally certifies butchers across the country.

    05

How does someone get involved in WorldSkills?

Apprentices, trainees, and students can nominate themselves, or be nominated by a teacher, training provider, or employer. There's no age limit to enter a Regional Competition, though age rules apply if a competitor progresses to Nationals.

    Looking Ahead

Daniel has been part of our team for several years now. We're looking forward to seeing where the next stage of his WorldSkills journey takes him.

Premium, without exception, isn't just our line. It's the standard Daniel helped set on the competition floor.

We'll share an update here on The Butcher's Block if Daniel's nomination to the 2027 National Championships is confirmed.
