    SB Marble Scoring Grading System

The Number on Your Steak Actually Means Something

Marble score helps you predict how rich, soft and indulgent a steak will eat before it reaches the pan.

Quick answer: the SB score describes visible intramuscular fat. As the score rises, marbling and richness generally increase. Higher is not automatically better. The right score depends on how much richness you enjoy, how much you want to serve and the occasion.

    What changes as marbling rises?

    RichnessGenerally increases
    SoftnessGenerally increases
    Portion sizeOften becomes smaller
    Added oilUsually becomes less necessary

Marbling is only one part of the steak. Cut, thickness and cooking temperature still shape the result. If you are also deciding between beef categories, compare Angus vs Wagyu.

    Cook

Your cooking should change with the score

    Lower to moderate marbling

A strong sear and simple seasoning let the beef flavour lead. Protect leaner steaks from overcooking.

    Higher marbling

Use less added fat, more controlled heat and a smaller serving. The marbling already brings plenty of richness.

    FAQs

    Quick answers

Is a higher marble score always better?

No. Higher scores are richer and softer, while lower scores can provide stronger traditional beef flavour and a less intense eating experience.

What score should a first-time Wagyu buyer choose?

SB 4-5 is a practical starting point. It gives you clearly visible marbling and Wagyu richness without jumping immediately to the intensity of SB 8-10.

Does marble score tell me which cut to buy?

No. The score describes marbling. The cut still changes tenderness, flavour, size and cooking style. Rib Fillet is used here to make the score comparison easier across similar cuts.

Does cooking change as the score rises?

Yes. Highly marbled steak usually needs less added oil and benefits from controlled heat and smaller portions. Thickness and target internal temperature still matter most.

    Best Starting Point

New to Wagyu? Start at SB 4-5.

It gives you noticeable marbling, tenderness and richness without jumping straight to the most intense grades.
