    Ever stood at the butcher counter, looked at two steaks side by side, and wondered why one costs more than the other? The answer is almost always in the marbling. That fine web of white fat running through the meat is not just visual. It is the single biggest indicator of how your steak is going to taste, feel, and satisfy.

    At Peter Augustus, we take the guesswork out of it. Every cut we carry is graded using the SB Marble Rating, a straightforward 0 to 10 scale developed by Stanbroke, one of Australia's most respected beef producers. The higher the score, the more marbling in the cut. Simple as that.

    What Is Marbling and Why Should You Care?

    Marbling is the intramuscular fat woven through the muscle of the beef. It is not the fat around the edges you trim away. It is the fat inside the steak itself, and it behaves very differently when heat is applied.

    As your steak cooks, that fat melts. It does not drip away. It bastes the meat from the inside out, keeping it moist, adding depth of flavour, and creating that signature tenderness that makes a great steak feel almost effortless to eat. A lean cut cooked to the same temperature will always feel drier and chewier by comparison. That is not a flaw in the cooking. That is just physics.

    The more marbling, the more forgiving the steak is to cook, and the richer the eating experience.

    The SB scale runs from SB 0 to SB 10. Here is how to read it at a glance:

    SB 0 – 2

    Lean and clean

    SB 3 – 5

    Higher Is Not Always Better. It Depends on You.

    This is where most people get it wrong. They assume a higher SB score is automatically the superior choice. But that is not the whole story. A heavily marbled cut cooked on a busy Tuesday night when you just want something quick and satisfying, can feel like too much. Richness that hits hard has its place, and that place is usually a slower meal, a proper occasion, or a table with people worth impressing.

    On the other hand, a well-cooked SB 2 cut, with a hard sear and a simple seasoning, delivers something no amount of marbling can manufacture: a clean, punchy beef flavour that stands completely on its own. Different experience. Just as valid.

    How Does It Compare to Japanese Grading?

    If you have shopped for Wagyu before, you have probably come across the Japanese BMS (Beef Marbling Score) system. It runs from 1 to 12 and is widely used to grade highly marbled Japanese beef breeds. The SB Rating works on the same principle but is calibrated specifically for Australian beef, giving you a local reference point that is honest and easy to apply.
