    Cooking Inspiration

    For the ultimate porchetta crackling, pat the skin dry and leave uncovered in the fridge overnight. Roast at 240°C for 30 minutes to crisp the skin, then reduce to 170°C, cooking for approximately 25 minutes per 500g until done. Rest well before carving to keep every slice juicy.

    Serve alongside roasted potatoes, salsa verde, spiced cherry glaze, or a bright apple-fennel slaw for a fresh contrast.
