Pan-sear on high heat, then finish in the oven to medium-rare (54–56°C internal). Rest for 5 minutes. Serve simply with salt, pepper, and a red wine jus or truffle butter.
Rub with olive oil, rosemary, garlic, and sea salt. Roast at 180°C for 40–50 minutes or until 52–54°C internal for medium-rare. Let rest under foil for 10 minutes before slicing.
